This cosmopolitan is an extraordinary beverage to me, and I am happy to share it for a few reasons. This was the primary beverage I had when I turned 21. I was out on the town with my late companion Kristin and she needed to take me out to an extravagant bar nearby and celebrate at long last being permitted to drink lawfully. Since, you know, I absolutely hadn't had a beverage before that! When I told the barkeep I needed a cosmopolitan yet to make it extraordinary for my 21st birthday, he said he had something immaculate as a top priority, a raspberry cosmopolitan. It was SO great. Not exactly equivalent to this one I've made here, however I will recall forget it. Truly noteworthy considering most don't recall their 21st birthday events.

I have a few companions that are long time bosom malignant growth survivors and are the absolute most grounded ladies I know. So this Very Pink Raspberry Cosmopolitan is to pay tribute to Lauren just as each other lady fighting bosom malignant growth. Good health!!

Whether you're looking for the perfect Valentine's Day cocktail or a drink for girl's night, the Very Pink Raspberry Cosmopolitan is perfect for the job!

Ingredients
For the Raspberry Juice:

  • 2 cups frozen raspberries 
  • 1 & ½ cups water


For the Cocktail:

  • 2 ounces Raspberry juice 
  • 2 ounces Raspberry Liqueur 
  • 4 oz good quality vodka ( Ketel one, Grey Goose) 
  • Juice from ½ lime 
  • 1 ounce simple syrup (Bring equal parts sugar and water to boil in a saucepan until the sugar is dissolved. Cool). 
  • Pink sugar crystals Raspberries for garnish



Instructions
To make the raspberry juice:

  1. Combine 2 cups of frozen raspberries and 1 1/2 cups of water and bring to a simmer, mashing the berries against the sides of the pain to release their juices. 
  2. Strain into a cup or bowl scraping the seeds with a spatula along the bottom of the strainer to extract all the juice.


To Prepare the Cocktail:

  1. Fill two standard size martini glasses with ice and water to chill. 
  2. In a shaker combine the Raspberry Juice, raspberry liqueur, vodka and lime juice over ice and shake a few times until ice cold. 
  3. Pour out the ice water from the martini glasses and dip the rims of the glasses in simple syrup then into pink sugar crystals. 
  4. Divide the mixture between the two glasses and garnish with raspberries.
  5. Serve and enjoy!
